Ingredients

  • 1 lb ground beef
  • ½ medium onion, finely minced
  • ¼ cup fresh parsley, chopped
  • 1 tsp cumin
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 2 tbsp olive oil

Instructions

    Mix ground beef, minced onion, parsley, cumin, paprika, cayenne, and a pinch each of salt and pepper in a bowl until just combined.

    Divide mixture into 8 portions and mold each around a metal skewer, forming a 5-inch cylinder with your hands.

    Heat oil in a large skillet over medium-high until it shimmers, about 1 minute.

    Sear kofta skewers 2 minutes per side without moving. Meat should be browned and charred on the outside.

    Transfer to a plate and let rest for 1 minute before serving. Drizzle with lemon juice if desired.
