Ingredients
- 1.5 lb beef chuck or sirloin, cut into 1-inch cubes
- ½ cup natural peanut butter (or finely ground peanuts)
- 1 can (14.5 oz) canned diced tomatoes
- 1 medium yellow onion, diced
- 1 medium sweet potato, cut into 1-inch cubes
- 1 cup beef broth
- 1 whole scotch bonnet or habanero chile (or 1 tsp hot sauce)

Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Pat beef dry, season with salt and pepper. Sear in batches without stirring, 2 minutes per side until browned. Set aside.

Add onion to the same skillet, sauté until softened and fragrant, about 3 minutes.

Stir in peanut butter, tomatoes, broth, sweet potato, and whole chile. Nestle beef back in.

Bring to a simmer over medium heat. Cook uncovered for 8–10 minutes until sweet potato is tender and sauce thickens slightly.

Remove chile, taste, and adjust salt and pepper. Serve hot over rice.
