Ingredients

  • 1.5 lbs beef brisket, trimmed
  • 6 cups beef broth
  • 3 tbsp ginger, sliced into coins
  • 2 whole star anise
  • 3 tbsp soy sauce
  • 8 oz egg noodles
  • ½ cup scallions, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp sesame oil

Instructions

    Cut brisket into 2-inch chunks, discarding excess fat.

    Heat a large pot over medium-high. Add brisket and sear 3–4 minutes per side until browned.

    Pour in broth, add ginger and star anise. Bring to a boil, then reduce to low.

    Simmer partially covered for 35 minutes until brisket is fork-tender.

    Stir in soy sauce. Taste and adjust salt and pepper.

    Bring broth back to a boil. Add noodles and cook until tender, ~5 minutes.

    Ladle soup into bowls. Drizzle with sesame oil and top with scallions and cilantro.
