Ingredients
- 1.5 lbs beef brisket, trimmed
- 6 cups beef broth
- 3 tbsp ginger, sliced into coins
- 2 whole star anise
- 3 tbsp soy sauce
- 8 oz egg noodles
- ½ cup scallions, chopped
- ¼ cup fresh cilantro, chopped
- 1 tbsp sesame oil
Instructions

Cut brisket into 2-inch chunks, discarding excess fat.

Heat a large pot over medium-high. Add brisket and sear 3–4 minutes per side until browned.

Pour in broth, add ginger and star anise. Bring to a boil, then reduce to low.

Simmer partially covered for 35 minutes until brisket is fork-tender.

Stir in soy sauce. Taste and adjust salt and pepper.

Bring broth back to a boil. Add noodles and cook until tender, ~5 minutes.
