Ingredients

  • ¾ lb ground beef
  • 2 cups beef broth
  • 1 can (14.5 oz) canned diced tomatoes
  • 3 whole dried guajillo or ancho chiles
  • 1 tbsp white vinegar
  • 4 whole corn tortillas
  • ½ whole lime (juiced)

Instructions

    Brown ground beef in a large skillet over medium-high, breaking up with a spoon, until no pink remains, about 5 minutes.

    Add broth, tomatoes, and dried chiles (stems removed). Simmer 10 minutes until chiles soften and flavors meld.

    Stir in vinegar and a pinch of salt. Taste and adjust seasoning—the broth should taste bold and slightly spicy.

    While broth simmers, slice tortillas into thin strips. Fry in a dry skillet over medium-high until crispy and lightly charred, about 3 minutes.
