Ingredients

- 1 lb beef stew meat
- 1 medium onion
- 2 medium carrots
- 1 can (15 oz) chickpeas
- 1 can (14.5 oz) diced tomatoes

Heat 1 tbsp olive oil in a large pot over medium-high. Add 1 lb beef stew meat and cook until browned on all sides, about 5 minutes. Remove beef and set aside.

Reduce heat to medium. Add remaining 1 tbsp olive oil, 1 chopped onion, and 2 sliced carrots. Cook until softened, about 5 minutes.

Return beef to pot. Add 1 can drained chickpeas and 1 can diced tomatoes with their juices. Stir in 1 cup water and bring to a simmer.

Cover and simmer gently until beef is tender and sauce thickens, about 20 minutes. Season with salt and pepper to taste.
