Ingredients
- 1.5 lbs Beef sirloin or flank steak
- 8 strips Bacon strips
- 2 whole Bell peppers (mixed colors)
- 1 whole White onion
- ½ lbs Oaxaca or mozzarella cheese
- 2 whole Jalapeño peppers
- 2 tbsp Olive oil
- 1 tsp Salt
- ½ tsp Black pepper
- ½ tsp Garlic powder
- 1 whole Lime

Soak 8 wooden skewers in water for 30 minutes. Cut beef into 1-inch cubes and pat dry with paper towels.

Dice bell peppers and onion into 1-inch pieces. Cut cheese into 1-inch cubes. Leave jalapeños whole.

Season beef cubes with salt, black pepper, and garlic powder.

Wrap each bacon strip around a cheese cube, then thread onto skewer in this pattern: beef, peppers, onion, bacon-wrapped cheese, jalapeño. Repeat until skewer is full, ending with beef.

Preheat grill to medium-high heat (about 400°F). Brush grates with oil.

Brush assembled skewers with olive oil. Place on grill and cook 10-12 minutes, turning every 2-3 minutes, until beef is charred and cooked to medium (160°F internal temperature) and bacon is crispy.

Remove from grill and squeeze fresh lime juice over skewers. Serve immediately while cheese is melted.
