Ingredients

  • 2 count large flour tortillas
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ cup fresh cilantro, chopped
  • ¼ cup diced onion
  • 1 tablespoon olive oil

Instructions

    Heat olive oil in a medium skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened.

    Stir in black beans, cumin, chili powder, garlic powder, salt, and pepper. Cook for 3-4 minutes, stirring occasionally, until heated through and fragrant.

    Warm flour tortillas in a dry skillet or directly over a gas flame for 20-30 seconds per side until pliable.

    Place each tortilla on a flat surface. Spoon half the bean mixture down the center of each tortilla.

    Sprinkle 0.5 cup shredded cheddar cheese and 0.125 cup cilantro over the beans on each tortilla.

    Fold the left and right sides of the tortilla inward, then roll tightly from the bottom up to form a burrito. Serve immediately.
