Ingredients
- 2 lb beef short ribs
- 1 cup barbecue sauce
- 1 lb frozen french fries
- 4 cup coleslaw mix
- ½ cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tsp salt
- ½ tsp black pepper
Instructions
- 1
Preheat oven to 425°F. Spread the 1 lb frozen fries on a baking sheet and bake until golden and crispy, about 25 minutes, shaking halfway.
- 2
Season the 2 lb short ribs with 1 tsp salt and 0.5 tsp pepper. Heat a large oven-safe skillet over medium-high and sear ribs until browned on all sides, about 6 minutes total.
- 3
Pour 1 cup barbecue sauce over the ribs, turning to coat. Cover the skillet with foil and transfer to the oven (reduce to 350°F). Braise until tender, about 40 minutes.
- 4
While ribs cook, make coleslaw: in a bowl, whisk 0.5 cup mayonnaise, 2 tbsp apple cider vinegar, and a pinch of salt. Add 4 cups coleslaw mix and toss to coat. Refrigerate until serving.
- 5
Remove ribs from oven, uncover, and let rest 5 minutes. Serve ribs with fries and a generous scoop of coleslaw on the side.
- 6
For extra flavor, brush ribs with additional barbecue sauce before serving.
