- ½ cup heavy cream
- 3 tbsp granulated sugar
- 1 large egg yolk
- ½ tsp vanilla extract
- ⅛ tsp fleur de sel or coarse sea salt
Instructions
- 1
Preheat your broiler to high. Line a small ramekin or cast-iron skillet (6–8 inches) with parchment, leaving edges to hang over.
- 2
Whisk cream cheese, heavy cream, and sugar until smooth and no lumps remain, about 60 seconds with a fork or whisk.
- 3
Fold in egg yolk and vanilla until the mixture is thick, pale, and uniform throughout.
- 4
Pour the batter into the prepared vessel and smooth the surface level. Sprinkle salt over the top.
- 5
Broil 4–5 minutes without moving. Edges should puff and brown; center jiggles slightly when you shake the pan.
