Ingredients

  • 1.5 lb beef chuck or stewing beef, cut into 1-inch cubes
  • 2 whole red bell pepper, sliced into 1-inch strips
  • 1 whole yellow bell pepper, sliced into 1-inch strips
  • 1 can (14.5 oz) canned diced tomatoes
  • 1 cup beef broth
  • 1.5 tsp Espelette pepper or smoked paprika
  • 3 cloves garlic, minced

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering.

    Brown beef in two batches without stirring for 2 minutes per side; set aside.

    Add garlic to the skillet and cook 30 seconds until fragrant.

    Add peppers and cook 3 minutes, stirring occasionally, until edges soften.

    Stir in tomatoes with juice, broth, and Espelette pepper; return beef to skillet.

    Simmer 12 minutes, uncovered, until beef is tender and liquid reduces slightly.
