Ingredients
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 large onions, sliced
- 6 cups vegetable broth
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped

Slice the onions thinly, keeping the layers separate.

Melt butter in a large pot over medium heat.

Add sliced onions and sauté for 8-10 minutes, stirring occasionally, until deeply caramelized and golden brown.

Sprinkle flour over the caramelized onions and stir constantly for 2-3 minutes to toast the flour and eliminate raw taste.
