Ingredients

  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 large onions, sliced
  • 6 cups vegetable broth
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

    Slice the onions thinly, keeping the layers separate.

    Melt butter in a large pot over medium heat.

    Add sliced onions and sauté for 8-10 minutes, stirring occasionally, until deeply caramelized and golden brown.

    Sprinkle flour over the caramelized onions and stir constantly for 2-3 minutes to toast the flour and eliminate raw taste.

    Gradually pour in vegetable broth while stirring to avoid lumps.

    Bring to a simmer and cook for 10-12 minutes, stirring occasionally, until the soup thickens slightly.

    Season with salt and black pepper to taste.
