Ingredients

  • 1 loaf (about 14 oz) barmbrack loaf (store-bought or homemade)
  • 4 tbsp unsalted butter
  • 2 tbsp honey
  • ¼ tsp ground cinnamon
  • ⅛ tsp sea salt
  • ½ tsp fresh lemon zest
  • 2 tbsp candied orange peel or dried apricots, chopped (optional garnish)

Instructions

    Slice the barmbrack into 0.5-inch-thick pieces. Pat dry with a kitchen towel.

    In a bowl, whisk butter, honey, cinnamon, salt, and lemon zest until light and fluffy, about 2 minutes.

    Heat a large skillet over medium-high heat. Once hot, lay slices flat in a single layer.

    Toast 2–3 minutes per side until golden brown and crispy at the edges. Work in batches if needed.

    Transfer toast to a plate. Spread each slice generously with whipped butter while still warm.

    Top with candied peel or apricots if using. Serve immediately.
