Ingredients

  • 4 count pre-made steamed bao (4-6 pieces)
  • 3 count eggs
  • 4 count bacon strips
  • 2 count scallions (green onion), chopped
  • 1 tbsp soy sauce
  • ½ tsp sesame oil
  • ¼ tsp white pepper

Instructions

  1. 1

Cook bacon in a skillet over medium-high heat until crispy, about 6 minutes. Transfer to a plate and chop.

  2. 2

Pour off all but 1 tsp bacon fat. Crack eggs into the same skillet and scramble over medium heat until just set, 3-4 minutes.

  3. 3

Toss scrambled eggs with soy sauce, sesame oil, white pepper, and half the scallions off the heat.

  4. 4

Warm bao in the microwave for 45 seconds or place cut-side down in the hot skillet for 30 seconds per side.

  5. 5

Divide egg mixture and bacon between bao. Top with remaining scallions. Serve immediately.
