Ingredients
- 4 count pre-made steamed bao (4-6 pieces)
- 3 count eggs
- 4 count bacon strips
- 2 count scallions (green onion), chopped
- 1 tbsp soy sauce
- ½ tsp sesame oil
- ¼ tsp white pepper

Cook bacon in a skillet over medium-high heat until crispy, about 6 minutes. Transfer to a plate and chop.

Pour off all but 1 tsp bacon fat. Crack eggs into the same skillet and scramble over medium heat until just set, 3-4 minutes.

Toss scrambled eggs with soy sauce, sesame oil, white pepper, and half the scallions off the heat.

Warm bao in the microwave for 45 seconds or place cut-side down in the hot skillet for 30 seconds per side.
