- 300 g ground pork
- 1 tbsp lemongrass, minced
- 2 tbsp fish sauce
- 80 g daikon radish, julienned
- 80 g carrot, julienned
- 3 tbsp rice vinegar
- 2 tsp sugar
- ½ piece cucumber
- ¼ cup fresh cilantro
- 2 cup cooked jasmine rice
- 2 tbsp mayonnaise
- 1 tsp sriracha

Toss daikon and carrot with rice vinegar, sugar, and a pinch of salt. Let pickle while you prepare everything else.

Cook ground pork with lemongrass in a skillet over medium-high heat until browned and cooked through, about 7 minutes. Season with fish sauce.
