Ingredients
- 1 cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- ¾ cup milk
- 1 large egg
- 1 medium ripe banana
- ¼ cup peanut butter
- 1 tbsp butter

In a large bowl, whisk together the 1 cup flour, 1 tsp baking powder, and 1/4 tsp salt.

In another bowl, mash the 1 banana with a fork until smooth. Add the 1 egg, 3/4 cup milk, and 1/4 cup peanut butter, and whisk until combined.

Pour the wet ingredients into the dry and stir until just combined; the batter should be slightly lumpy.

Heat a griddle or large skillet over medium heat and melt the 1 tbsp butter. Pour 1/4 cup batter per pancake and cook until bubbles form on the surface, about 2-3 minutes.

Flip and cook until golden brown on the other side, about 1-2 minutes. Serve warm with extra banana slices and a drizzle of peanut butter if desired.
