Ingredients

  • 2 medium ripe bananas, mashed
  • 1 cup rolled oats
  • 2 large eggs
  • ½ tsp vanilla extract
  • 1 tsp baking powder
  • 2 cups fresh fruit and chocolate chips (sliced bananas, kiwi, pineapple, chocolate chips)

    Blend mashed banana, oats, eggs, vanilla, and baking powder in a blender until smooth, 60 seconds.

    Heat a non-stick skillet or griddle over medium-high until a water drop sizzles on contact, about 90 seconds.

    Pour batter in 4-inch circles onto the hot skillet. Cook until edges look set and bubbles form on top, 2–3 minutes.

    Flip carefully and cook the other side until golden, another 90 seconds.

    Transfer pancakes to a plate. Top with sliced bananas, kiwi, pineapple chunks, and chocolate chips.
