Ingredients

  • 2 lb pork shoulder
  • 4 cloves garlic
  • 1 inch ginger
  • 1 shallot
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Preheat oven to 375°F. Pat the 2 lb pork shoulder dry with paper towels and score the skin in a crosshatch pattern with a sharp knife.

    In a small food processor, combine 4 garlic cloves, 1 inch ginger (peeled), 1 shallot, 1 tsp turmeric, 1 tsp coriander, 1 tsp salt, and 0.5 tsp black pepper. Pulse into a smooth paste, adding a splash of water if needed.

    Rub the spice paste all over the pork, pressing it into the scored skin. Let sit at room temperature for 15 minutes to absorb flavors.

    Place the pork on a rack in a roasting pan, skin side up. Roast for 45 minutes, until the skin is crackling and the internal temperature reaches 145°F.

    Remove from oven and rest for 10 minutes before slicing. Serve warm with rice or vegetables.

    For extra heat, add a pinch of chili flakes to the spice paste before rubbing.
