Ingredients
- 4 filets white fish fillets
- 1 cup shredded mozzarella cheese
- ¼ cup fresh parsley
- ½ cup breadcrumbs
- 2 tablespoons olive oil
- ½ teaspoon salt

Preheat oven to 400°F. Pat the 4 fish fillets dry and season both sides with the 0.5 tsp salt.

In a small bowl, mix the 1 cup mozzarella and 0.25 cup chopped parsley. Spoon this mixture onto the center of each fillet, then fold the fillets over to enclose the filling.

Place the stuffed fillets in a baking dish. Top each with the 0.5 cup breadcrumbs and drizzle with the 2 tbsp olive oil.
