Ingredients

  • 8 slices thinly sliced deli ham
  • 4 whole large eggs
  • ½ cup sharp cheddar cheese, shredded
  • 2 tbsp fresh chives or green onions, chopped
  • to taste salt and black pepper
  • 1 tbsp butter

Instructions

    Preheat oven to 400°F. Butter a 4-cup muffin tin generously.

    Line each muffin cup with 2 ham slices, overlapping slightly and draping over the edges.

    Crack one egg into each ham cup. Top with cheese and chives. Season with salt and pepper.

    Bake 12–14 minutes until egg whites are set but yolks still jiggle slightly when gently shaken.

    Cool 2 minutes, then carefully lift each cup using a fork and slide onto a plate. Serve hot.
