Baked Eggs in Avocado

Crack an egg into a halved avocado and bake until the white sets but the yolk stays runny. Finish with a pinch of red pepper flakes and serve with ketchup on the side for dipping.

Ingredients

  • 1 whole avocado, ripe
  • 1 whole egg
  • ¼ tsp salt
  • ⅛ tsp red pepper flakes

Instructions

    Halve the avocado lengthwise, remove the pit, and scoop out a small well in each half.

    Place both halves cut-side up in a small baking dish or on foil.

    Crack the egg into one well, sprinkle salt and red pepper flakes over it.

    Bake at 400°F until the egg white sets but the yolk still jigglies, about 12 minutes.

    Serve hot with ketchup on the side for dipping.
