Ingredients

  • 1.5 lb pork loin
  • 8 slices bacon
  • 1 whole avocado
  • 4 cups mixed greens
  • 1 whole tomato
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

    Preheat oven to 400°F. Pat the 1.5 lb pork loin dry and season all over with 1 tsp salt and 0.5 tsp black pepper.

    Lay the 8 bacon slices side by side on a cutting board. Place the pork loin on top and wrap the bacon around it, tucking the ends underneath.

    Heat 1 tbsp olive oil in an oven-safe skillet over medium-high. Sear the wrapped pork until the bacon is browned on all sides, about 3-4 minutes per side.

    Transfer the skillet to the oven and roast until the pork reaches 145°F in the center, about 20-25 minutes. Let rest for 5 minutes before slicing.

    While the pork rests, whisk the remaining 1 tbsp olive oil with a pinch of salt and pepper in a large bowl. Add the 4 cups mixed greens and 1 chopped tomato, and toss to coat.

    Halve the avocado and remove the pit. Slice the rested pork into thick slices and serve with the avocado half and salad on the side.

    Optional: sprinkle the salad with a squeeze of lemon juice or a dash of red wine vinegar if you have them.
