- 8 slices bacon
- 1 whole avocado
- 4 cups mixed greens
- 1 whole tomato
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Pat the 1.5 lb pork loin dry and season all over with 1 tsp salt and 0.5 tsp black pepper.

Lay the 8 bacon slices side by side on a cutting board. Place the pork loin on top and wrap the bacon around it, tucking the ends underneath.

Heat 1 tbsp olive oil in an oven-safe skillet over medium-high. Sear the wrapped pork until the bacon is browned on all sides, about 3-4 minutes per side.

Transfer the skillet to the oven and roast until the pork reaches 145°F in the center, about 20-25 minutes. Let rest for 5 minutes before slicing.

While the pork rests, whisk the remaining 1 tbsp olive oil with a pinch of salt and pepper in a large bowl. Add the 4 cups mixed greens and 1 chopped tomato, and toss to coat.
