Ingredients
- 2 large chicken breasts
- 6 slices bacon slices
- 3 tbsp butter
- 2 tbsp fresh herbs (parsley, thyme, or chives)
- 2 medium onions or shallots
- 2 stalks green vegetables (leeks or celery)
- 1 tbsp olive oil
- ½ tsp salt and pepper

Preheat oven to 400°F. In a small bowl, mix the 3 tbsp butter with the 2 tbsp chopped herbs, 0.25 tsp salt, and a pinch of pepper until combined.

Butterfly the 2 chicken breasts by slicing horizontally almost through, open like a book. Spread the herb butter inside, then close and season the outside with remaining salt and pepper.

Wrap each breast with 3 bacon slices, tucking ends underneath. Secure with toothpicks if needed.

In an oven-safe skillet, heat 1 tbsp olive oil over medium-high. Sear the chicken for 2-3 minutes per side until bacon is lightly browned.

Add the 2 sliced onions and 2 chopped green vegetables around the chicken. Transfer skillet to oven and roast until chicken reaches 165°F and bacon is crisp, about 20-25 minutes.
