Ingredients
- 4 thighs chicken thighs, bone-in and skin-on
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 4 cloves garlic cloves, minced
- 1 lime lime, juiced
- 1 tbsp Indonesian chili paste (sambal oelek) or sriracha
- 1.5 cups steamed white rice
- 2 glasses iced tea or iced water with lime

Mix soy sauce, brown sugar, minced garlic, lime juice, and chili paste in a small bowl until sugar dissolves.

Pat chicken thighs dry. Season both sides with salt and black pepper.

Heat 1 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

Place chicken skin-side down in the hot skillet. Sear without moving for 6–7 minutes until skin is golden and crispy.

Flip chicken, pour the glaze over it, and cook for 5–6 minutes until the sauce caramelizes and chicken is cooked through.
