Ingredients
- 1.5 lbs beef sirloin, cut into 3/4-inch cubes
- 1.5 tbsp fresh ginger, minced
- 1 tsp red chili flakes (or 1 fresh red chili, minced)
- 1 whole lime (juiced)
- 2 tbsp soy sauce
- 2 tbsp tomato paste
- 1 large onion, sliced into thick rings

Pat beef dry. Season generously with salt and black pepper.

Heat 2 tbsp oil in a large skillet over high heat until it shimmers, about 90 seconds.

Working in two batches, sear beef 2 minutes per side without stirring. Transfer to a plate.

Add onion to the skillet and cook, stirring, until edges char and soften, about 3 minutes.

Stir in ginger and chili flakes, cook until fragrant, 30 seconds. Add soy sauce, tomato paste, and lime juice.

Return beef to the skillet, toss to coat, and cook 1 minute until sauce clings. Serve hot.
