Ingredients
- 2 slices bread (sourdough or whole grain)
- 1.5 tbsp olive oil
- 1 whole avocado, ripe
- 1 whole egg
- ¼ tsp salt
- ⅛ tsp red pepper flakes

Toast bread until golden brown and crispy, about 2–3 minutes per side.

Heat 0.5 tbsp oil in a skillet over medium-high until it shimmers, ~90 seconds.

Crack egg into the skillet and fry until whites set but yolk still jiggles, ~3–4 minutes.

While egg cooks, halve avocado and scoop flesh into a bowl; mash lightly with a fork.

Drizzle remaining 1 tbsp oil on toast. Spread mashed avocado evenly on both slices.
