Ingredients

  • 2 slices bread (sourdough or whole grain)
  • ½ whole ripe avocado
  • 1 whole eggs
  • 2 slices ham, sliced
  • ½ whole tomato
  • ¼ tsp red pepper flakes or hot sauce (optional)

Instructions

    Toast bread until golden brown and crispy, about 2 minutes per side.

    Heat oil in a small skillet over medium-high. Crack egg into pan and cook until whites set but yolk still jiggles, 3–4 minutes.

    While egg cooks, scoop avocado flesh onto toast and mash with a fork, then season with salt and pepper.

    Layer ham and tomato slices on top of the avocado.

    Slide fried egg onto the toast, then sprinkle with red pepper flakes or hot sauce if using.

    Serve immediately.
