Austrian Liver Dumplings in Broth

Ingredients

  • ¾ lb pork liver
  • ½ lb pork shoulder, ground
  • 1 medium onion, finely diced
  • 2 slices bread, crusts removed, torn into pieces
  • 3 tbsp whole milk
  • 6 cups beef broth
  • 2 tbsp fresh parsley and chives, chopped

Instructions

    Pulse liver in food processor until finely chopped, ~20 seconds.

    Combine bread and milk in a small bowl. Let sit 2 minutes until soft.

    Mix liver, ground pork, onion, bread mixture, salt, and pepper in a bowl until just combined.

    Bring broth to a boil in a large pot over medium-high heat.

    Using wet hands, form mixture into 12 golf-ball-sized dumplings.

    Gently slide dumplings into boiling broth one at a time.

    Reduce heat to medium. Simmer until dumplings float and are cooked through, ~12 minutes.

    Taste and adjust with salt and pepper. Ladle into bowls.

    Garnish with parsley and chives. Serve hot.
