Ingredients

  • 6 cups beef broth
  • 4 oz ground beef
  • 2 large eggs
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • 1 pinch salt and pepper to taste

Instructions

  1. 1

Crack the 2 eggs into a bowl and beat them with a fork until the yolks and whites are fully mixed together, about 30 seconds.

  2. 2

Add the 0.25 cup flour and a small pinch of salt and pepper to the eggs; stir with a fork until you have a smooth, thin batter with no lumps visible.

  3. 3

Set an 8-inch nonstick skillet over medium heat and place the 2 tablespoons of butter inside; wait about 45 seconds until the butter is melted and foamy.

  4. 4

Pour half of the batter into the hot skillet, tilting the pan side to side so the batter spreads into a thin, even layer covering the bottom, like making a crepe.

  5. 5

Cook until the pancake looks set and pale golden on the underside, about 1 minute; slide it onto a clean cutting board and repeat with the remaining batter.

  6. 6

Once both pancakes have cooled for 30 seconds, roll each one tightly like a newspaper, then slice crosswise into thin strips about 0.5 inches wide.

  7. 7

Pour the 6 cups of beef broth into a large pot and set it over medium-high heat; wait for small bubbles to appear at the bottom and sides, about 3 minutes.

  8. 8

Use a spoon to crumble the 4 oz of ground beef into tiny pieces, stirring it into the hot broth to break it apart evenly, about 2 minutes total.

  9. 9

Let the broth come to a gentle simmer with steady small bubbles breaking the surface; cook for 5 minutes so the beef finishes cooking through.

  10. 10

Taste a spoonful of broth and add more salt and pepper as needed until it tastes savory and balanced.

  11. 11

Ladle the broth and ground beef into bowls, dividing the frittaten strips evenly among them and laying them on top.
