Ingredients

  • 1 small head, about 1 lb napa cabbage
  • 1 large carrot
  • 3 tbsp rice vinegar
  • 1.5 tbsp sesame oil
  • 1 tbsp, minced fresh ginger
  • 1 to taste salt and pepper

Instructions

    Slice napa cabbage into thin ribbons, about 1/4 inch wide. Discard the core.

    Peel carrot and shred into thin matchsticks using a box grater or julienne peeler.

    Combine rice vinegar, sesame oil, minced ginger, salt, and pepper in a small bowl.

    Place cabbage and carrot in a large bowl. Pour dressing over and toss until evenly coated.

    Let sit 5 minutes for flavors to meld. Toss again before serving.
