Ingredients
- 1 box (2 sheets) frozen puff pastry sheets
- 3 medium Granny Smith apples
- 1 tbsp cinnamon
- ½ cup granulated sugar
- 1 large (for egg wash) egg
- 1 tbsp lemon juice

Peel, core, and dice the apples into 1/4-inch pieces. Toss with lemon juice, sugar, and cinnamon in a bowl.

Heat a large skillet over medium-high. Add the apple mixture and cook, stirring occasionally, until softened and syrupy, about 5 minutes.

Thaw the puff pastry sheets slightly (3–4 minutes) until pliable. Cut each sheet into 4 equal squares.

Place 2 tbsp apple filling in the center of each pastry square. Fold diagonally to form a triangle and press edges to seal.
