Ingredients
- ¾ lb beef sirloin or tenderloin, thinly sliced
- ¼ cup tahini
- 1 whole lemon (juiced)
- 1 small red onion, thinly sliced
- 4 pieces warm pita bread
- 1 medium tomato, diced
- 1.5 tsp cumin, smoked paprika, and cinnamon (mixed)
- 10 oz frozen french fries

Start fries in a skillet over medium-high heat with a splash of oil, stirring occasionally until golden and crispy, about 12 minutes.

Toss beef with cumin mix, salt, and pepper. Heat 2 tbsp oil in another skillet over high heat until it shimmers.

Cook beef in batches without stirring for 2 minutes per side until edges brown; set aside.

Whisk tahini with lemon juice, 3 tbsp water, salt, and 1 minced garlic clove until smooth and pourable.

Toss red onion with 1 tbsp lemon juice and salt; let sit 2 minutes to soften and pickle slightly.

Spread tahini sauce on pita, layer with beef, pickled onion, tomato, and parsley; serve with fries.
