Ingredients

  • 4 whole russet potatoes, medium
  • 6 slices bacon, chopped
  • 1 cup cheddar cheese, shredded
  • ½ cup sour cream
  • 1 tbsp olive oil
  • 1 pinch salt and black pepper to taste

    Slice each potato lengthwise in half. Scoop out flesh, leaving 1/4-inch shell.

    Cook bacon in a skillet over medium-high until crispy, ~6 minutes. Transfer to paper towels.

    Chop cooled bacon. Mix with cheese and set aside.

    Toss potato skins with oil, salt, and pepper. Arrange cut-side down in air fryer basket.

    Air fry at 400°F for 5 minutes until edges curl and outsides crisp.

    Flip skins. Fill each with bacon-cheese mixture. Air fry 2 more minutes until cheese melts.

    Top each skin with a dollop of sour cream. Serve immediately.
