Ingredients
- 4 whole russet potatoes, medium
- 6 slices bacon, chopped
- 1 cup cheddar cheese, shredded
- ½ cup sour cream
- 1 tbsp olive oil
- 1 pinch salt and black pepper to taste

Slice each potato lengthwise in half. Scoop out flesh, leaving 1/4-inch shell.

Cook bacon in a skillet over medium-high until crispy, ~6 minutes. Transfer to paper towels.

Chop cooled bacon. Mix with cheese and set aside.

Toss potato skins with oil, salt, and pepper. Arrange cut-side down in air fryer basket.

Air fry at 400°F for 5 minutes until edges curl and outsides crisp.
