Ingredients

  • 2 each boneless, skinless chicken breasts
  • ¾ cup panko breadcrumbs
  • ½ cup Parmesan cheese, grated
  • 1 each egg
  • 1 cup marinara sauce
  • ¾ cup mozzarella cheese, shredded
  • 1 pinch salt and pepper
  • 1 spray bottle olive oil spray

Instructions

    Pat chicken dry with paper towels. Place each breast between plastic wrap and pound to 1/2-inch thickness.

    Mix panko, Parmesan, salt, and pepper in a shallow bowl. Beat egg in another shallow bowl.

    Dip each chicken breast in egg, then dredge in panko mixture, pressing gently so coating adheres.

    Spray air fryer basket with olive oil. Arrange chicken in a single layer, not touching.

    Air fry at 380°F for 12 minutes, until coating is golden and internal temp reaches 165°F.

    Top each breast with 2 tablespoons marinara, then 3 tablespoons mozzarella.
