Ingredients
- 2 each boneless, skinless chicken breasts
- ¾ cup panko breadcrumbs
- ½ cup Parmesan cheese, grated
- 1 each egg
- 1 cup marinara sauce
- ¾ cup mozzarella cheese, shredded
- 1 pinch salt and pepper
- 1 spray bottle olive oil spray

Pat chicken dry with paper towels. Place each breast between plastic wrap and pound to 1/2-inch thickness.

Mix panko, Parmesan, salt, and pepper in a shallow bowl. Beat egg in another shallow bowl.

Dip each chicken breast in egg, then dredge in panko mixture, pressing gently so coating adheres.
