Ingredients
- 2 whole russet potatoes, medium
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 1 serving's worth butter, sour cream, shredded cheddar, and fresh chives

Scrub potatoes under running water and pat dry with a paper towel.

Prick each potato all over with a fork, about 8–10 times per potato.
