Ingredients

  • 2 large russet potatoes
  • 1 tbsp olive oil
  • 1 pinch each salt and black pepper
  • ½ cup cheddar cheese, shredded
  • 4 slices bacon, cooked and crumbled
  • ¼ cup sour cream
  • 2 tbsp fresh chives, chopped
  • 1 tbsp butter

Instructions

    Scrub potatoes under cold water to remove dirt. Pat dry completely with paper towels.

    Prick each potato several times with a fork to prevent bursting.

    Rub potatoes lightly with olive oil, then season all over with salt and black pepper.

    Place potatoes in air fryer basket in a single layer. Cook at 400°F for 25 minutes.

    Check potatoes with a fork—they should be tender inside and the skin should look crispy.

    Carefully remove potatoes. Slice each one lengthwise and fluff the insides with a fork.

    Top each potato with butter, then divide cheese and bacon between them. The heat will melt the cheese.
