Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 6 whole limes (juiced)
  • 2 whole jalapeño, thinly sliced
  • ½ whole red onion, thinly sliced
  • 1 whole avocado, sliced
  • 1 whole cucumber, sliced into rounds

Instructions

    Pat shrimp dry with paper towels. Slice each shrimp in half lengthwise for faster curing.

    Pour lime juice into a bowl. Add shrimp, jalapeño, and red onion. Stir gently.

    Refrigerate for 10 minutes. Shrimp will turn opaque and firm — this is the "cook."

    Divide shrimp and curing liquid between bowls. Top with cucumber slices and avocado.

    Season with salt and pepper. Serve immediately with the lime juice in the bowl.
