Ingredients

  • ½ cup zucchini, finely grated
  • ¼ cup all-purpose flour
  • 3 tbsp sugar
  • 1 whole egg
  • 2 tbsp vegetable oil
  • ¼ tsp cinnamon

    Grate zucchini on the large holes of a box grater. Squeeze out excess water by wrapping in a clean towel and twisting hard.

    In a microwave-safe mug, whisk together egg, oil, and sugar until smooth and well combined.

    Add flour, cinnamon, and squeezed zucchini. Fold gently until no dry flour streaks remain.
