Ingredients

  • ½ cup natural peanut butter (or peanut paste)
  • ¼ cup coconut milk
  • 3 tbsp lime juice
  • 2 tbsp soy sauce
  • 1 tbsp red chili paste (or sriracha)
  • 1 tbsp maple syrup (or brown sugar)

Instructions

  1. 1

Add peanut butter, coconut milk, lime juice, soy sauce, and chili paste to a bowl.

  2. 2

Whisk until smooth and creamy, breaking up any peanut butter clumps, about 1 minute.

  3. 3

Stir in maple syrup until fully combined.

  4. 4

Taste and adjust: add more lime for tang, soy for saltiness, or chili for heat.

  5. 5

If too thick, thin with warm water 1 tbsp at a time until you reach your preferred consistency.

  6. 6

Serve immediately with tempeh satay, fresh lime wedges, and vegetables for dipping.
