Ingredients

  • 12 cookies ladyfinger cookies (savoiardi)
  • 1 cup mascarpone cheese
  • 1.5 tbsp instant espresso powder
  • 3 tbsp granulated sugar
  • ½ cup heavy cream
  • 2 oz dark chocolate
  • ¼ cup water (hot)

Instructions

    Stir espresso powder into hot water until dissolved. Let cool slightly, about 1 minute.

    Whip mascarpone with sugar until smooth, about 1 minute. Fold in heavy cream until light and fluffy.

    Finely chop dark chocolate. Pour hot espresso over it and let sit 1 minute, then stir until melted and glossy.

    Quickly dunk each ladyfinger into cooled espresso for 1 second per side—do not soak. Layer 3 in the bottom of a jar.

    Spread half the mascarpone cream over the cookies. Drizzle half the chocolate ganache on top.

    Repeat: dunked ladyfingers, mascarpone cream, chocolate ganache. Chill at least 2 hours before serving.
