Ingredients

  • 3 large egg whites (room temperature)
  • ¾ cup granulated sugar
  • 1 tbsp cornstarch
  • ½ tsp white vinegar
  • 1 cup heavy cream
  • 2 cups fresh berries (mixed)

Instructions

    Preheat oven to 300°F. Line a sheet pan with parchment paper.

    Beat egg whites with an electric mixer until soft peaks form, about 2 minutes.

    Gradually add sugar while beating until stiff, glossy peaks form, another 3–4 minutes.

    Fold in cornstarch and vinegar gently with a spatula until just combined.

    Spoon 4 nests onto parchment, making a shallow indent in the center of each.

    Bake until pale and crispy, about 20 minutes. Cool on the pan for 5 minutes.
