Fragrant basmati rice layered with spiced ground lamb, yogurt, and fried onions—all in one pot. A TikTok-friendly riff on Awadhi biryani that skips the long simmer without sacrificing the layered, aromatic soul.

Ingredients

  • 1.5 cups basmati rice
  • ¾ lb ground lamb
  • ½ cup plain yogurt
  • 1.5 tsp garam masala
  • ½ cup fried onions (store-bought)
  • 3 tbsp ghee or oil
  • ¼ cup fresh cilantro, chopped

Instructions

  1. 1

Rinse basmati rice under cold water until water runs clear, then drain.

  2. 2

Heat ghee in a large pot over medium-high. Brown ground lamb, breaking it up with a spoon, until no pink remains, ~5 minutes.

  3. 3

Stir in garam masala and garlic, then add yogurt and half the fried onions. Cook until fragrant, ~2 minutes.

  4. 4

Add 3 cups water and bring to a boil. Stir in rice, then reduce heat to low and cover.

  5. 5

Simmer covered until rice is tender and liquid is absorbed, ~10 minutes.

  6. 6

Remove from heat. Top with remaining fried onions and cilantro, then fluff with a fork and serve.
