Ingredients

  • ¾ lb ground lamb
  • 1 medium onion, diced
  • 1 can (14.5 oz) canned diced tomatoes
  • 1 can (15 oz) canned chickpeas, drained and rinsed
  • 3 cups vegetable or chicken broth
  • 3 tsp total cumin, cinnamon, and ginger (1 tsp each)
  • ½ whole lemon, halved

Instructions

    Heat olive oil in a large pot over medium-high. Add onion, cook 2 minutes until softened.

    Add ground lamb, breaking up with a spoon as it browns, until no pink remains, ~5 minutes.

    Stir in cumin, cinnamon, and ginger. Cook 30 seconds until fragrant.

    Add tomatoes (with their liquid), chickpeas, and broth. Bring to a simmer.

    Simmer 8–10 minutes until flavors meld and soup thickens slightly.

    Squeeze lemon over the pot. Taste and season with salt and pepper. Serve hot.
