Ingredients
- 1 lb ground lamb
- 1 medium yellow onion, diced
- 1.25 lbs potatoes, cut into 3/4-inch cubes
- 4 cups beef or lamb broth
- 4 sprigs fresh thyme sprigs
- 1 leaf bay leaf

Brown ground lamb in a large pot over medium-high heat, breaking it up with a spoon, until no pink remains, ~5 minutes.

Add diced onion to the pot and cook, stirring, until soft and translucent, ~3 minutes.

Pour in broth and add potatoes, thyme sprigs, and bay leaf. Bring to a simmer.

Simmer uncovered until potatoes are tender, ~8 minutes. Season with salt and pepper to taste.
