Ingredients
- 3 large egg whites (room temperature)
- ¾ cup granulated sugar
- ½ cup heavy cream, cold
- ½ tsp vanilla extract
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
- 1 tbsp powdered sugar (for dusting)

Preheat oven to 350°F. Line a sheet pan with parchment paper.

Whip egg whites in a large bowl until stiff peaks form, 3–4 minutes.

Gradually add sugar, whisking until thick, glossy, and fully dissolved, ~2 minutes.

Drop 4 heaping dollops of meringue onto the parchment, using the back of a spoon to create a shallow well in the center of each.

Bake until pale golden and crisp on the outside, 10–12 minutes. Cool completely on the pan.

Whip cold cream with vanilla until soft peaks form, ~90 seconds.

Spoon whipped cream into the center of each nest and top generously with fresh berries.
