Ingredients
- ½ lb shrimp, large (peeled and deveined)
- ¼ lb squid, cleaned and sliced into rings
- 6 cups chicken or seafood broth
- 6 oz rice noodles (dried, 1/8-inch wide)
- 2 whole star anise
- 1 whole lime (juiced) + fish sauce to taste

Bring broth to a rolling boil in a large pot. Add star anise and simmer for 2 minutes until fragrant.

Add rice noodles and cook according to package directions until tender, usually 4–5 minutes.

Add shrimp and squid, stirring gently. Cook until shrimp is opaque and squid is tender, about 2 minutes.

Squeeze lime juice over the pot. Stir in fish sauce to taste (start with 1 tbsp and adjust).
