Ingredients

  • 6 pieces chicken thighs, bone-in skin-on
  • 10 oz pearl onions (fresh or frozen)
  • 8 oz mushrooms, halved
  • 1 cup red wine
  • ½ cup chicken broth
  • 1 tbsp tomato paste
  • 2 sprigs fresh thyme

Instructions

    Pat chicken dry. Season generously with salt and pepper on both sides.

    Heat olive oil in a large skillet over medium-high until shimmering. Sear chicken skin-side down 4 minutes without moving until golden.

    Flip chicken, sear 2 minutes, then push to the sides. Add onions and mushrooms to the center, stir 2 minutes.

    Pour in red wine and broth. Stir in tomato paste and thyme. Bring to a simmer, then reduce heat to medium-low.

    Simmer uncovered 10 minutes until chicken is cooked through and sauce reduces slightly, stirring vegetables once.

    Taste and adjust with salt and pepper. Serve hot from the skillet or in shallow bowls.
