Ingredients

  • 1.5 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup (1 stick) butter, softened
  • 2 large eggs
  • 1.5 tsp baking powder
  • 1.25 lbs (about 8–10 plums) fresh plums

Instructions

  1. 1

Preheat oven to 375°F. Line a 13×9-inch sheet pan with parchment or grease lightly.

  2. 2

Cream butter and sugar in a bowl until pale and fluffy, about 2 minutes with a spoon.

  3. 3

Beat in eggs one at a time, then stir in flour, baking powder, and a pinch of salt until just combined.

  4. 4

Spread batter evenly across the pan. Halve the plums, remove pits, and press them cut-side down into the batter in rows.

  5. 5

Bake until the cake is golden and a toothpick inserted in the center comes out clean, 12–14 minutes.

  6. 6

Cool on the pan for 5 minutes, then slice and serve warm or at room temperature.
