Ingredients

  • 1 cup basmati rice
  • ¾ lb ground lamb
  • 1 large yellow onion
  • 2 tbsp ginger-garlic paste
  • ½ cup whole yogurt
  • 2 tsp biryani spice blend (cumin, coriander, cardamom, cinnamon)
  • 3 tbsp ghee or clarified butter
  • ¼ cup fresh cilantro and mint, chopped

Instructions

    Boil rice in salted water until just tender, ~12 minutes. Drain well and set aside.

    Slice onion thin. Heat 1 tbsp ghee in a large skillet over medium-high until shimmering.

    Cook onion, stirring often, until deep golden-brown and crispy at edges, ~8 minutes. Transfer to a bowl.

    Add remaining 2 tbsp ghee to the skillet. Brown ground lamb with ginger-garlic paste, breaking up clumps, until no pink remains, ~5 minutes.

    Stir in biryani spice blend and cook for 30 seconds until fragrant. Fold in yogurt.

    Layer cooked rice over the lamb, top with caramelized onions and fresh herbs. Fold gently to combine and serve hot.
