Ingredients
- 12 oz boneless, skinless chicken breasts
- 3 tbsp khao soi curry paste (or red curry paste)
- 1 can (13.5 oz) coconut milk
- 1.5 cups chicken broth
- 6 oz dried ramen or egg noodles
- 1 tbsp fish sauce
- 1 whole lime (juiced)
- 3 whole scallions, thinly sliced

Slice chicken breasts into 1/2-inch-thick pieces. Boil broth and noodles in a large pot for 3 minutes until noodles are just tender.

Heat 1 tbsp oil in a separate skillet over medium-high. Fry a handful of noodles in batches, 1 minute per side, until golden and crispy. Transfer to a plate.

In the same skillet, add curry paste and stir for 30 seconds until fragrant. Add chicken pieces and coat with paste, cooking 4 minutes until cooked through.

Pour boiled broth and noodles into the skillet with chicken. Stir in coconut milk and fish sauce. Simmer 2 minutes until curry is glossy.

Squeeze lime juice over the bowl. Taste and adjust fish sauce or lime to your preference.
