Ingredients

  • 2 lb pork leg (pata), skin-on, cut into 3-inch pieces
  • 3 tbsp soy sauce
  • 2 tbsp white vinegar
  • 4 cloves garlic, minced
  • 2 whole bay leaves
  • 1 cup water

Instructions

    Add pork, soy sauce, vinegar, garlic, bay leaves, and water to instant pot.

    Seal and pressure cook on high for 12 minutes. Quick-release steam.

    Drain pork well. Pat skin dry with paper towels.

    Heat oil in large skillet over medium-high until shimmering.

    Fry pork skin-side down 4–5 minutes until skin blisters and browns.

    Flip and fry 2 minutes more until edges crisp. Serve hot.
